Don't you love a good food gift around the holidays? This homemade Ginger Syrup recipe makes a lovely hostess gift, stocking stuffer, or coworker gift.
I'm even including a printable recipe card, so your recipient can make their own ginger ale with their syrup like a champ!
How to Make Ginger Syrup
You only need three simple ingredients to make sticky-sweet, slightly spicy ginger syrup:
- fresh ginger
- sugar
- water
To make the syrup, start by coarsely chopping your fresh ginger. It takes quite a bit of ginger to make the syrup, so I saved time by using my mini food processor to chop it.
Of course, you can chop by hand, if you prefer.
You don't need to worry about peeling the ginger for this recipe. The peel will get filtered out later on.
Transfer that chopped ginger to a pan with organic sugar, then add a couple of cups of water to the mix.
Bring everything to a boil, then reduce the heat and simmer it to infuse the water with that gingery goodness. When the simmering time is up, let the mixture cool slightly (do not skip cooling!), and then it's time to strain!
I like to strain my syrup by placing a funnel into my storage container, then placing a fine mesh strainer on top of that. Ladle the mixture into the strainer to get the pieces of ginger -- including the skin -- out of the syrup.
Once you finish straining, you'll be left with about three cups of ginger syrup, which is enough for making two to three gifts, depending on the size of the storage container you choose.

Ways to Use It
This ginger syrup recipe is lovely as the base for homemade ginger ale. Making ginger ale with this syrup couldn't be simpler!
Just add a splash of the syrup to a cup of soda water, top it off with ice, and add a squeeze of lime juice.

How to Store It
Your Ginger Syrup will keep for 3-4 weeks in the refrigerator in an airtight container.
I like to store this in a glass sauce bottle, so it's easy to pour. Storing this syrup in a mason jar is fine, but it can be messy to pour, especially when the jar is very full.

Ingredients
For the Ginger Syrup
- 2 cups water
- 2 cups organic sugar
- 3 cups coarsely chopped ginger leaving the peel on is fine
For One Ginger Ale
- 2 tablespoons Ginger Syrup
- 1 cup soda water
- ¼ of a fresh lime
Instructions
To Make the Ginger Syrup
Combine all of the ingredients in a small saucepan. Bring to a boil on medium heat until the sugar is fully dissolved, about 2 minutes, then cover and bring to a simmer over low heat for 45 minutes.
Pour the cooled syrup through a fine mesh strainer into a glass container.
To Make One Glass of Ginger Ale
Combine the syrup and soda water in a tall glass, and stir to combine. Top it off with ice and a squeeze of juice from the ¼ lime.
📝 Notes
The recipe yields 3 cups of ginger syrup, which is enough to make 24 glasses of homemade ginger ale. One serving of the syrup is 2 tablespoons.
